It all starts with Swiss chard, which locals call blitva. Contrary to its name, this flowering plant is native to the Mediterranean region, and it’s one of Croatia’s essential nutrients, which UNESCO has recognized as part of the Mediterranean Intangible Cultural Heritage.

Chard, Mangel or Blitva in Croatian, is a leafy green vegetable commonly used in Croatian cuisine, and therefore used as the main ingredient in soparnik whereby it has lively green leaves that are finely chopped up and mixed with garlic, onions, and olive oil just a touch. Then, fillings are enclosed into a thin dough, producing a rustic pie cooked perfectly on an open fireplace, locally known as “komin.”
